I also like cutting it up into bite sized pieces and putting it in a skillet and cooking it and then you add onions and green peppers and let it cook and brown a little then get 2 cans of cream of mushroom soup and mix it all together and then put it over rice. Yum!!
Chicken Enchiladas, Chicken Fajitas, and my husband's personal favorite- Soy Sauce Chicken and veggies w/brown rice. You can also go to food network and type in chicken recipes and try some new stuff out (and then tell us if they were any good ;) )
Tomorrow I am cooking ranch chicken strips. Basically cut the breasts into strips and add the ranch dressing packet seasoning to bread crums and flour then fry them up.
Other things are:
White Chicken Chili Chicken Stir Fry Sante Fe Chicken (crockpot with black beans, mexican corn and salsa served over tortilla chips and grated cheddar cheese) Hawiian BBQ Chicken (crockpost with BBQ sauce and a can a crushed pineapple serve over rice) Chicken & Gravy (crockpot with chicken gravy packets, peas, carrots (or any other veg. frozen you want)) Served over egg noodles or rice.
A spin on chicken and dumplings is to use Perogie's as the dumplings :) Good stuff!
Whip up a couple of eggs. The get some bbq chips crush them. Then cut chicken in bite size prices, dip them in eggs, then in chips. Put on baking sheet and cook @ 350 for about 15-20 mins until chicken is cooked. It's Yummy and can make a lot.
McCormick has a Honey BBQ packet... you add honey and water and pour over chicken breasts and bake and its pretty good... I usually cook it twice as long as it suggests tho... I'm kinda funny about that kinda stuff.
