Honey, I love those things! I was telling my girls the other day how their Grammy would make them and its was a special treat in our family. The just looked at me like that was the worst thing they ever heard. My oldest said that it was just grouse (spl? ) I told her not to knock it until she tried it.

heck yah pig feet is good, especially when you put vinegar and salt on them, mmm.tell ya another thing i like...hog jaw, they taste like pork skins, those are good if they are cooked right.

Cooking pig's feet is kind of like cooking turkey necks; it takes a while. You have to cook them extra long because the heat has to penetrate the thick pork skin and cook the meat underneath.

Wash them thoroughly and put them in a pot with cut up onion and potatoes (and some turnips if you feel like it). Don't forget the McCormick Seasoned Salt or Lawry's. Bring the pot to a full boil and then do a high simmer for about 3 hours; then, lift a portion of the skin and test the meat for fork tenderness. If it shifts easily, they're done. If it doesn't you'll have to keep simmering them until they do. Sometimes it's best to just put them on in the morning and let them simmer until lunch or early dinnertime.

It's so funny; I don't eat soul food but I can sure cook it, lol.

just curious... do you not eat it because you don't like it or because it is unhealthy? I was watching a show on Food Network (i forget the name... beverly hill chef or something) and they were doing a healthy makeover on soul food for a family. It was AMAZING how many calories are in traditional soul food... I am sure that is what makes it good though. I have came to the conclusion that anything GOOD for you tastes just ok... anything that tastes fabulous is just BAD. LOL.

A little of both, actually. Mostly it's because I know the history behind soul food, so it's hard for me to eat it when I know its origin.
